Prep time:
15 minutes Ingredients:
1.5 cups flour
1/2 tsp baking powder
3/4 tsp salt
(pinch of grated or ground nutmeg--I always skip this)
2 large eggs
1/2 cup milk

Directions:
Combine the dry ingredients in a medium-to-large bowl.
Beat the eggs and milk together, then add to the flour mixture.
Beat well with a wooden spoon or similar blunt instrument, forming a fairly elastic batter.
Bring a bunch of salted water to a simmer in a large-ish pot.
Dump the batter in a large-holed colander.
Smash it through the holes into the simmering water using the aforementioned wooden spoon/similar instrument.
When they float, they're done. Lift them out with a slotted spoon or strainer.
Serve with melted butter and/or browned breadcrumbs. [I always go with butter].
